Da Lat Weasel Coffee – Civet Coffee’s Real Flavor

Trai Ham Da Lat Weasel Coffee, the big weasel farm in Dalat

The big farm producing the famed weasel coffee in the Central Highlands province of Lam Dong has opened its door for visitors to see the entire process of making the coffee with the help of domesticated animals.

Location & Area of weasel coffee farm

The two-hectare farm at 135E Hoang Hoa Tham Street, Da Lat city, is keeping as many as 120 weasels (a type of civet) with the permission of the local forest management agency, and can produce an average of 500 kilograms of weasel coffee every year.

The place for tourists are interested in coffee

Visitors to the farm can see the entire process of making the coffee with the help of the domesticated animals which are under supervision of the local forest management agency.

Meeting the owner of farm

“For every coffee crop, the weasels, a type of civet, are fed with highest quality Arabica coffee berries. The coffee beans which are relatively undigested and intact in their droppings were then collected, cleaned and processed for sale,” the farm’s owner Mr. Nguyen Quoc Minh said.

Experts say the enzymes inside weasels’ stomach give the undigested coffee beans delightful taste and distinctive aroma. Mr. Minh said, the coffee has been checked and recognised by the Pasteur Institute of Da Lat and the Nuclear Research Institute for good quality and hygiene.

The publicizing of weasel coffee production process at the farm contributes to popularising the quality and trademark of Vietnamese coffee, as well as creating a new sight-seeing spot for tourists in Da Lat city.

 

ABOUT WEASEL COFFEE – CIVET COFFEE

Weasel coffee is the name of a special coffee, the rarest drink in the world. This kind of coffee exists only in the Central Highlands of Vietnam. It is collected from coffee farms, which is the feces discarded by wild weasels after eating mature coffee beans. Thus, it is really rare.

Trai Ham Weasel Coffee is produced under closed process. Clean Moka coffee farm and Weasel farm. Weasels eat mature coffee beans and discard feces, then people collect it and process.

In Indonesia, the word Kopi Luwak is used to refer to this Weasel Coffee. However, the material of Moka coffee from Cau Dat, Trai Ham in Dalat with the height of over 1500m is the best.

In Weasel’s digestive system, with the fermentation of enzymes in stomach, the taste of this coffee is changed and becomes more tasteful mixed with the smell of mold. John Cleese, a Bristish actor stated: “It has the buttery taste of soil, immature taste of mold, solf sweet, also like the taste of syrup, like that it brings the harmony of jungle and chocolate”.

Cat Tien National Park has been recognized as a world biosphere preservation area by UNESCO.

It has an area of 70,548 hectares, in which 26,969 ha belongs to Lam Dong, 39,108 ha belongs to Dong Nai and 4,469 ha belongs to Binh Phuoc. Cat Tien national park has a head office in Tan Phu district – Dong Nai province and a management board office in Phu My commune – Cat Tien district – Lam Dong province.

The park has multiform areas: hill, expanse along the blanks of river and waterfall. In the rainy season, the streams become falls. In the middle of river, there are some small islands. Tourist can go camping on the islands and make the camp – fire at night.

Along the riverside: there is an old forest with many kinds of precious wood on the left and the most wonderful waterfall of Cat Tien on the right – Heaven waterfall. Going through the forest and passing some deep valleys, tourist will discover Bau Sau – the biggest pool in the center of the park. There are a lot of kinds of fish, especially crocodile in the pool and many bird herds around the pool.

Plant system has more than 1362 species of high – ranking trees, 440 species of precious wood, hundreds of medical trees, 133 species of orchid, ect,… About animals, there are 62 kinds of animals and 121 kinds of bird.

In the park, archaeologists discovered a temple of Phu Nam kingdom on the top of A1 hill which belongs to Cat Tien districts – Lam Dong province. The temple was built with bricks. Its platform, door-frame and pillars were decorated with granite and pattern. The temple has some golden Lingas, among that there is the biggest one in the Southeast Asia – Yoni – with 2.1m height and 0.7m were carved the picture of life then such as dancing girls, soldiers, elephants, cows, lotus, ect…

According to the old people, there was a love story of K’Lang (a boy of Lach minority people) and Ho-biang (a girl of Chil minority people). Their family both lived at the foot of the mountain. They met each other by chance and then they were beloved. However, they were at different tribes, so Ho-biang couldn’t get married to K’Lang.

Finally, they decided to overcome their strict customs and got married. Then they left their hometown and came to live in a place in the top of the mountain. One day, Ho-biang was ill, K’Lang managed to cure his wife but she couldn’t get over her illness. K’Lang decided to go back Ho-biang village to inform people about her illness. However, because Chil people hated him, they prepare a bow and a poisoned arrow to kill him. Suddenly, Ho-biang went to stand before K’Lang to prevent her husband from the arrow. The arrow shot her and she died. K’Lang cried a lot and he also died. His tear turned into a scream that we call Dankia now.

After the Death of K’Lang and Ho-biang, the father of Bian realized what he did before was wrong, so he united all the hill tribes of Lach, Lang and Biang turned into two mountains standing with each other, so the local people gave the name Langbiang for the mountain.

History of Nguyen Huu Hao palace
It was built in 1930s. It had ever been Mr. Nguyen Huu Hao’s – father of Queen Nam Phuong (King Bao Dai’s wife). Then, he presented it to his daughter. Why was it called with this name? According to Dalat people, Queen Nam Phuong and her family used to come here to stay when Palace 3 hadn’t been built. So, it was name “Queen Nam Phuong’s palace” or “Nguyen Huu Hao’s palace”.

The palace is not very big. It has 2 floors which are strong and beautiful. Its appearance was designed in the cube shape. The inside architecture was decorated originally with granite pressed on the fireplace. Its wooden doors had arch shape and its windows were colorful made the palace warm and luxurious.

Coming to this palace, visitors can see some things which its ex-owner used, such as a set of silver-plated cups and teapots, silver-plated bowl used for washing hands, alcohol lamp, cigar box, etc. Beside, they can see photographs and documents of Mr. Nguyen Huu Hao family, Queen Nam Phuong and her children. There are also some other things which were usually presented in every ancient palace in 1930s in Dalat – Vietnam, such as oil lamp, worshping cabinet, phonograph, ancient style tables and chairs, etc.

The palace not only has a beautiful ancient architecture and wonderful view, but also concerns to some famous people of Vietnam. These make it become an attractive place for visiting when they come to Dalat – Lamdong.

In 1919. when Grand Lac (Xuan Huong Lake now) was built to found a sight in the center of Dalat city, architect Hébrard had an idea to make an outstanding point for the lake, so a small island with oval shape appeared. Previously, it was a small wooden stilt-house used for the tourists who wanted to go there for fishing. After that in 1930s, it was built as a water-sport Club with the unique architecture – a shape of grenouillère which its floor laid on the water surface. However, as many reasons, the swimming sport wasn’t popular any more in Dalat then, the Club turned to be a small refreshment bar.

After 1975, it belonged to the management of Lamdong Tourist Company as a small restaurant. Since then, it has become the typical sumbol of Dalat which has always been painted with the white. This makes the pavilion on water stand out from the green of Dalat nature.

Located on a pine hill at No.2 Yet Kieu street, Dalat city, the palace is now the National Preservation Center 4. It is the place of wood-made documents of Nguyen Dynasty. Recently, it has been recognized as the World document heritage and it is in the program: Memory of the World.

Beside its palaces, visitors can also see directly the pieces of wood-made document of Nguyen Dynasty and other documents such as Document about Vietnam since 1962, documents about the Centrals and Highlands of Vietnam in the war (1954 – 1975), book: “Dalat – Lamdong past anf present”.

Otherwise known as Palace Number 3 (Palace III), Bao Dai’s summer Palace was used as a retreat by the family of King Bao Dai, the last king of Viet Nam. Built from 1933 to 1938, the cube – like art deco exterior angled away from the entrance point, disuises the true size of the palace, which contains 25 rooms built within the colonial architectural framework.

Upstairs are the royal living quarters. The room of Bao Long, who now lives in England, is decorated in yellow, the royal color. The huge semicircular couch was used by the emperor and empress for family meeting, during which their three daughters were seated in the pink chairs and their two son on the yellow chairs.
